Ingredients:
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1.4 tsp salt
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 large egg
- 3/4 cup packed light brown sugar
- 3 ripe bananas, mashed
- 1/3 cup vegetable oil
- 1 tsp vanilla
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Mix together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In separate bowl whisk together the egg, brown sugar, bananas, vegetable oil, and vanilla.
- Combine the dry mixture and wet mixture. Do not over-mix.
- Pour into muffin pan with liners and bake for 14-16 minutes or until done.
These will be easy for me to take to work with my lunch. They took very little time to mix up and the bonus was that they were already dairy free! Hope you all enjoy!
